Bengal duars fusion

Malaikari is an old Bengali fusion food, mixing the kitchen traditions of Malay with the Bengali. The coconut milk curry in which the prawn is cooked has an Indian spiciness along with the Malay heat. In Siliguri, the main city in the Bengal Duars, a very inventive Nepali chef has deconstructed it and merged it with momo. The plate looks like prawn momo at first, but the white sauce on the side is the malaikari. And the crisps on the plate are infused with the aroma of prawns. It was a delightful construction mixing the Nepali, and Bengal-Malay traditions. As the Duars taste prosperity wonderful new things are beginning to emerge.
